Marinated BBQ Thai Chicken Lettuce Wraps

 This, right here is my kind of deal. Hello easy and delicious! I am so pumped at how these BBQ Thai chicken lettuce wraps came out, Thai is a big deal in my household; as in me, myself and I -hah. My hubby unfortunately doesn’t quite share the love of the savory, authentic flavours Thai creates with their dishes. He did eat three of these wraps though, do I dare say he was starving? I was sneaky, like in a previous post I mention to wait for your significant other to be real hungry before you whip out a new creation. Ta-da (as my little girl would say) we have a new house hold dinner winner!

 

 Marinating the chicken thighs overnight is the best. This gives them lots of time to absorb all the tasty ingredients and become nice and tender for your next day BBQ Thai chicken lettuce wraps.

 Layering a couple pieces of the organic iceberg lettuce or butter lettuce gives this wrap a great crunch and makes it super easy to roll and bite. You can either mix all the ingredients together or layer them. Don’t forget to sprinkle these BBQ Thai chicken lettuce wraps with some roughly chopped cashews. Yummy!

Ingredients
  1. 4-6 chicken thighs (can serve 2-4 people depending on size)
  2. 1 organic head of iceberg lettuce or butter lettuce
  3. 1 cup organic shredded or thinly sliced cabbage
  4. 2 peeled organic carrots
  5. 1 cup roughly chopped raw cashews
Marinade
  1. 1/2 cup coconut milk
  2. 2 tbsp. fish sauce
  3. 2 tbsp. coconut aminos
  4. 3 tbsp. raw honey
  5. 1/2 tsp. cardamom
  6. 1 lime juiced
  7. 2 minced organic garlic cloves
  8. 1-2 tbsp. minced fresh ginger
  9. 1 tsp. raw organic peanut butter or almond butter or sunflower seed butter
  10. 1 tbsp. organic chili pepper paste
Peanut sauce
  1. 1/2 cup coconut milk
  2. 2 tbsp. peanut butter or sunflower butter
  3. 1 tbsp. raw honey
  4. 1 tbsp. coconut aminos of tamari
  5. 1 heaping tsp. organic red curry paste
  6. 1 tsp. unrefined sea salt or to taste
Instructions
  1. For the marinade combine all the ingredients into a bowl and soak your chicken overnight or for a minimum of 6 hours.
  2. Heat your BBQ up on medium/low and cook each chicken thigh for 8-12 minutes on each side, brushing the excess marinade on as much as possible. When chicken is done, take off the BBQ and let it cool before either shredding it with a fork or thinly slicing it.
  3. In a sauce pan add the peanut sauce ingredients and whisk together. Heat and very lightly simmer for 3 minutes and remove into a dish to cool. If you wish for it to be a little thinner you can add more coconut milk or water. If you wish for it to be a little thicker you can add another tbsp. peanut butter or sunflower butter. (it will thicken up once it cools)
  4. Shred, peel and chop your cabbage, carrots and cashews and add to a bowl
  5. Delicately peel off the lettuce leaves and layer 2-3 inside each other to form a bowl. Place chicken inside along with cabbage and carrots and sauce. Sprinkle with chopped cashews and garnish with cilantro or parsley.
