Toddler Pancake Fun (Grain-free)

Here is a fabulous pancake recipe for your little tot. This recipe is grain free, and one of my popular recipes for adults too! You can incorporate berries or bananas and either give the pancakes plain or with a little dark maple syrup or raw honey. I use whole eggs in this recipe so would advise this recipe be for babies over 1 year of age. You certainly can experiment with these pancakes and just add in egg yolks instead of the whites (which are high in protein and said to be a little more difficult to digest for babies under 6-12months) for your baby under 1 year of age.

Baby Pancakes & Grain-Free

Nutritious tot pancakes with sweet potato, eggs and optional fruit

Ingredients
  1. 1 medium sized sweet potato
  2. 4 pastured eggs
  3. 1/2 tsp vanilla
  4. Optional 1/4 cup berries or bananas
  5. pinch unrefined sea salt
  6. Pinch cinnamon if you enjoy that flavour
Instructions
  1. Roast your sweet potato in the oven the night before. Place the potato(es) on a baking sheet lined in foil or parchment paper and set your oven to 450 degrees F and place them in for 30 minutes on each side (60 minutes total or until tender)
  2. Once skin is cooled on the sweet potato cut into cubes, should make approximately 1 1/2 cups.
  3. Put the sweet potato cubes into a blender
  4. Place the eggs, vanilla, sea salt and (cinnamon) in the blender as well and blend on high for 20 seconds
  5. Use a spatula to scrape out the batter into a bowl
  6. Heat up a skillet to medium heat and fry the pancakes up in butter, ghee or coconut oil
  7. Check the underneath to till browned as they don't bubble on the tops like wheat flour pancakes.
