Raspberry, Banana Dairy-Free Custards


These have got to be one of my favourites. I love, love the texture of custards. I usually make custards with egg yolk, raw cream and raw milk, but I had a few people ask if I could make a custard that is dairy free? This is a perfect recipe for whole-food, dairy-free custards! The coconut milk and bananas do wonders for a smooth texture, and the eggs make them look so beautiful coming out of the oven. You can definitely serve these as a dessert and dress them with a sauce, heap them with an assortment of berries or even just a pinch of cinnamon, nutmeg or shaved dark chocolate. I tend not to over use sweeteners in my recipes so if you need them a bit sweeter for a dessert you can add in a touch more honey or try them with maple syrup or even dates.

 These make a fantastic breakfast. Granted they take a little longer in the oven, but only 10 minutes to whip up. Once in the oven you can just wait and go about your morning. These are high protein for a great start to the day and balanced with fruit and the right kind of fat to help boost your metabolism and give you energy for the day.

  1. 2 ripe bananas
  2. 1/2 cup rinsed raspberries
  3. 2 tbsp. raw honey
  4. 4 whole eggs
  5. 1 cup full fat coconut milk (I use Organic Thai Coconut Milk)
  6. 1 tsp. real vanilla extract
  7. 1/4 tsp. cinnamon
  8. pinch kelp/sea/Himalayan salt
  9. 1 tsp. virgin coconut oil for ramekins
  1. Set oven to 350 degrees.
  2. Oil 5 ramekins with coconut oil.
  3. Place ramekins in a shallow dish with 1 inch of water.
  4. Place raspberries in a dish and mash with a fork till just broken apart.
  5. Place banana, coconut milk, honey, eggs, vanilla, cinnamon and salt into a blender (Vita Mix or food processor).
  6. Blend till smooth.
  7. Stir in raspberries and pour into ramekins till the very tops.
  8. Place into the middle of the oven for 45minutes.
  9. Take out, cool and enjoy!
  1. You can make plain banana custards buy taking out the raspberries. You can also add in a different berry if raspberries are not your preference or not on hand.
  2. You can use 4 egg yolks if you wish to make these dairy-free custards for your little one who is between 6 months and 1 year. Remember, you wont get the same rise by omitting the whites.
