Raw Key Lime Pie

This raw key lime pie recipe is dedicated to my momma. She was the inspiration and had the creative mind for this fresh, smooth and decadent piece of heaven. We have been making it close to three years now for baby showers, birthdays and family get-togethers. Every time a good handful of people ask for this recipe, or wish to take a little extra home for a snack or their next day breakfast.

This raw key lime pie is naturally sweetened with raw honey (I used orange blossom) and can be whipped up in a food processor. Have this pie in the fridge for company, or for your breakfast, lunch or even a dinner treat! This makes a fantastic contribution to any potluck, picnic, bbq or party. I guarantee it will be a hit, this raw key lime pie is super quick to whip up, cover and leave to set in the fridge overnight. (or an hour if you want to consume as close to right away as possible)

Once the ‘dough’ is mixed you can mold it into your pie dish. You can grease your pie dish with a little coconut oil so it’ll be easier to cut and lift out.

Crust
  1. 1-1/2 cups cashews and/or almonds or a mix (what I like to do)
  2. 3 cups shredded coconut
  3. 1 tbsp. fresh organic lemon juice
  4. 1/2 tbsp. natural vanilla extract
  5. 4 tbsp.raw honey or you can do up to 1/2cup, depending on how sweet you like it. (I use 4tbsp.)
  6. 1 tbsp. virgin coconut oil
Filling
  1. 5 ripe avocados
  2. 1 tbsp. organic lemon zest
  3. 1 tbsp. organic key lime zest
  4. 1/4 cup fresh organic lemon juice
  5. 1/2 cup fresh organic key lime juice (you can play with the ratio if you'd prefer more lemon)
  6. 3/4 cup raw honey
  7. 1 cup virgin coconut oil (soft)
  8. 1 vanilla pod seeded from end to end
  9. 1/2 tsp sea salt
  10. Topping: Optional
  11. 1 can thai coconut milk (refrigerated overnight)
  12. 2 tbsp. raw honey
  13. 1 tsp. natural vanilla extract
Instructions
  1. In a food processor pulse your raw nuts till fine. Add the rest of the ingredients until well combined and a thick dough like texture forms.
  2. Take the 'dough' out with your hands and press into a pie plate forming a crust. Place into the refrigerator while you make your filling.
  3. In the food processor place in all of your filling ingredients and blend till very smooth. Take your crust out of the refrigerator and pour in all of your filling. Place some wrap over the top and put back into the refrigerator for an hour or overnight to let it set.
  4. To make the coconut cream topping, take out your can of coconut milk that was put in the fridge overnight. Open it and spoon out all of the firm white milk and spoon it into a bowl. Leave the opaque liquid at the bottom of the can. (You can use this up by adding it to a soup or a smoothie)
  5. With a handmixer beat the firm coconut cream till smooth, while beating add in the raw honey and vanilla.
  6. When the pie is set you can smooth this over the top and garnish with lime wedges, zest or both!
Notes
  1. I would not leave this outside of the fridge for more than an hour.
  2. This pie lasts forever, the longest I have had some in my fridge was 8 days and it was still great.
  3. The lemon and lime help prevent the avocado from going brown, it will stay bright green for a long time.
  4. If wanting to make this pie in a pie tin, it will make enough for two.
