Roasted Brussel Sprouts with Cauliflower and Bacon

This easy roasted brussel sprout recipe is a perfect side dish for dinner or even if you are craving this combo like we do. We whipped this recipe up into a salad (see below) because my hubby was craving brussle sprouts, and well, making a large four course meal on a Tuesday night wasn’t in the cards – this side has now become the main! So delicious, so yummy…but lets face it, what doesn’t taste good with bacon? We enjoy this meat every now and then and purchase ours from a farm that traditionally raises their animals. We get almost all our meat from this farm, and are happy to support their fantastic practice.

You can roast almost any veggies this way, its a great way to make a crisp flavourful side and incorporate different seasonings. You must try a dish of roasted brussel sprouts if you haven’t, and the bacon definitely adds a “we belong together” factor.

We had to make this dish due to a serious ‘hubby’ craving, so instead of making it a side with our non-existent four course Tuesday night dinner, we went ahead and made this dish into a salad – our main course. The heavy, buttery flavours of the roasted brussel sprouts and cauliflower with the ghee and bacon marry well with a crisp romaine, crunchy chopped nuts and a light olive oil or pumpkin seed oil and an aged balsamic with lemon.

Roasted Brussle Sprouts with Cauliflower and Bacon

Ingredients
  1. 1lb organic brussel sprouts
  2. half of 1 organic cauliflower, florets
  3. 4-6 pieces pasture/traditionally raised bacon
  4. 3 tbsp. ghee (clarified butter) or coconut oil
  5. 1 tsp. sprinkled unrefined sea salt
  6. Optional - cracked black pepper
Instructions
  1. Set oven to 400 degrees F
  2. Line a baking sheet with foil
  3. Rinse the brussle sprouts and cauliflower, trim the brussle sprout ends and quarter them. Trim the cauliflower of its florets and mix both into a bowl.
  4. Drizzle the ghee over the tops of the veggie-mix along with the sea salt and optional pepper - toss.
  5. Evenly spread out the brussle sprouts and cauliflower over the baking sheet
  6. Take out the pastured bacon and slice into pieces, scatter the bacon over the tops and sides of the veggies and pop the baking sheet into the oven for 30-35 minutes.
  7. Check the veggies at 15 minutes and mix
Notes
  1. You can just do the brussle sprouts or add more veggies like broccoli.
