Spiced Jamaican Meatballs & Butternut Pasta



Another fantastic way to eat squash! Making noodles from squash, zucchini or even sweet potato gives a great new way to consume “pasta” this is extremely exciting for those of you who may be grain free and can’t tolerate gluten. I knew it was for me!  I will be experimenting with this genius veggie spiralizer for the next while and will add some tasty “pasta” creations to this blog.

This recipe with its seared spiced Jamaican meatballs and coconut cream sauce and herbs with the buttery vegetable – butternut squash, compliments each other perfectly. This makes a fantastic light dinner or lunch. This meal is also super fun to eat, and entice kids to perhaps enjoy some more veggies in this different way.

Spiced Jamaican Meatballs & Squash Pasta

Meat balls
  1. 1lb grass fed beef
  2. 1 small white organic onion
  3. 1 1/2 tsp. homemade curry powder or you can use store bought pre-mixed organic curry powder
  4. 1/2 tsp. dried thyme
  5. 1/2 tsp. ground allspice
  6. 1 tsp. smoked paprika
  7. 1 tsp. onion powder
  8. 1/2 tsp. unrefined sea salt or Himalayan
  9. 2 crushed or grated garlic cloves
  10. 1 egg
  11. 1/4 cup chicken or beef broth
  12. 1 large butternut squash
  1. 1 cup coconut milk
  2. 1/4 tsp. turmeric
  3. 1/4 tsp. onion powder
  4. 1/4 tsp. garlic powder
  5. 1/2 tsp. mustard
  6. 1 tsp. maple syrup
  7. pinch sea salt and pepper
  1. In one bowl add the ground beef and all ingredients ontop of the beef.
  2. Mix with your hands or a wooden spoon
  3. Heat a skillet to medium and add in some coconut oil, ghee or butter.
  4. Mold beef into a messy meatball in your hands and sear on the warmed skillet
  5. Let each meatball sear for a couple minutes and flip over to sear the other side for a couple minutes
  6. turn down the heat and let the meatball cook through (about 5 minutes) being careful not to let them get too dry inside.
  7. When done place them on some paper towel to cool.
Squash Pasta
  1. Cut the butternut squash in half closest to the end of the large bulb as possible.
  2. Peel the long part of the squashes skin to reveal the bright orange flesh.
  3. Cut the peeled squash into three parts and press each part at a time to the end of the spiralizer Turn and process through the blades till noodles start appearing at the other end
  4. With kitchen scissors cut noodles at every 11-14inches and let them fall into a bowl
  5. Lay noodles onto parchment paper on a pan and bake at 350 degrees F for 6 minutes
  6. Increase the oven to 450 broil and leave noodles for another 4 minutes or until tender.
  7. Careful not to burn.
  1. Add coconut cream, spices, mustard and maple syrup to a food processor and pulse till blended.
  2. chop up some fresh parsley or coriander for garnish and sprinkle over dish.
  3. In a bowl add noodles, sauce and a couple meatballs.
  1. You can use other meats like chicken or turkey.
  2. Don't be afraid to get creative and spice it up some with other spices or herbs to make it your own.
