Strawberry Lime Heart Pops

I decided to make a fresh easy popsicle, like these strawberry lime pops, to finally welcome spring to our area. Strawberries are just coming into season down south and I know my little one is always craving this juicy, sweet berry. This recipe also incorporates ground chia seed, homemade kefir (or you can use coconut milk) and flesh from a young coconut. These coconuts are usually easy to find in your grocery store or health food store when in season, and really fun. Be very careful while cutting the tip off with a sharp knife. Drink up the fresh coconut water and then break it apart and scoop out the coconut flesh. The young coconut flesh can also create a smooth pudding base.

The possibilities for a popsicle or frozen yoghurt or pudding are endless and such a great way to incorporate dense nutrition to your babes diet, and yours! These pops are also amazing for a child going through some of that bothersome teething pain. The cold and yummy flavour will take their mind off the discomfort.

Ingredients
  1. Flesh of one young coconut
  2. 4 large ripe organic strawberries quartered
  3. 2 heaping tbsp. homemade kefir (or organic yogurt or coconut milk)
  4. 1 tsp. ground chia
  5. ½ a lime, juiced
  6. ½ a lime zested
  7. pinch unrefined sea salt
Instructions
  1. Put all of these ingredients except the chia into a small blender and blend till smooth.
  2. Stir in the ground chia, or you can use whole chia seeds
  3. Spoon into an ice cube tray, or a popsicle mold and add sticks
  4. Set in freezer till frozen
Notes
  1. If you can find a fun mold to use, even better! You can use an ice cube tray or a popsicle mold you may have on hand.
  2. Feel free to get creative!
