Sunday Morning, Chocolate-Chip Pancakes (grain-free)

Welcome to the easiest, delicious grain-free, Sunday morning chocolate-chip, fluffy pancake recipe. Let me also mention, high in protein and always a morning crowd pleaser when served with some crunchy traditionally raised, nitrate free bacon, fresh fruit, maple syrup and maybe even some homemade chutney, jam or yogurt! This meal makes you feel so refreshed, spoiled, (if you are lucky enough to get it made for you, maybe even in bed?) energized and full, but not uncomfortable. You can enjoy this breakfast as a treat without having to compromise your health, or feeling bloated and guilty afterward. Go ahead, have one or three more! 😉 IMG_7291 I have been Gluten-free for a very long time, I have made and tried so many gluten-free pancakes and grain-free pancakes and these ones here, are my all time favourite. They taste so much like the original, fluffy pancakes I grew up with but are made strictly from a sweet potato. The sweet potato with the purple/brownish skin not the yam with the bright orange skin. The yam will also work nearly identically if you cant find the purple skinned sweet potato in your grocery store or health food store. The sweet potato usually has white/yellowish flesh while the yam is a bright orange flesh.  Enjoy your delicious, feel good morning!

Mix some dark chocolate chips into this lustrous smooth batter.

Fry them up in some raw, pastured butter, coconut oil or ghee (clarified butter) and enjoy! 🙂 You can add some dark maple syrup, raw honey, yogurt, homemade jam or chutney. The flavours of this fluffy, dense pancake compliment natural sweetener’s and fruits perfectly.  IMG_7294

Grain-Free Sunday Morning Chocolae-Chip Pancakes

Ingredients
  1. 1 medium sized sweet potato
  2. 4 pastured eggs
  3. 1/2 tsp vanilla
  4. 1/4 cup semi dark chocolate chips (I use Enjoy Life)
  5. pinch unrefined sea salt
  6. Pinch cinnamon if you enjoy that flavour
Instructions
  1. Roast your sweet potato in the oven the night before. Place the potato(es) on a baking sheet lined in foil or parchment paper and set your oven to 450 degrees F and place them in for 30 minutes on each side (60 minutes total or until tender)
  2. Once skin is cooled on the sweet potato cut into cubes, should make approximately 1 1/2 cups.
  3. Put the sweet potato cubes into a blender
  4. Place the eggs, vanilla, sea salt and (cinnamon) in the blender as well and blend on high for 20 seconds
  5. Use a spatula to scrape out the batter into a bowl
  6. Heat up a skillet to medium heat and fry the pancakes up in butter, ghee or coconut oil
  7. Check the underneath to till browned as they don't bubble on the tops like wheat flour pancakes.
Notes
  1. If you are using 2 cups sweet potato add one more egg to make it 5, and so on for every half cup.
  2. You can use regular orange yams (often also called sweet potatoes) for this recipe as well, they turn out very similar and just as tasty
