Thai Coconut Soup

This delicious Thai coconut soup is one of the most popular Thai dishes. The sweet, spicy and savoury flavours leave you ultimately satisfied at the end of eating a nice big bowl. This soup is so easy to make and is delicious appetizer before a meal or as a meal. You can load it up with some shredded chicken to make it a more feeling meal.

A note to all the mommies and daddies reading this recipe, the first time I let my little girl try this soup she gulped down a whole mug full! Don’t be wary to let your children have  little spice or savoury flavours in their diets. Your child doesn’t have to be destined for chicken fingers, fries, hotdogs and ketchup if you give them a chance.

Ingredients
  1. 6 cups chicken stock
  2. 1 tsp. ghee or coconut oil
  3. 2 1/2 cups coconut milk full fat (I use organic Thai Coconut Milk)
  4. 1 stalk lemon grass very thinly sliced
  5. 2 tsp. freshly grated ginger
  6. 2 cups thinly sliced shiitake mushrooms
  7. ½ tsp. dried chili flakes
  8. 2 tbsp. fish sauce
  9. 2 green onions finely chopped
  10. 1 tbsp. raw honey
  11. 1 ½ tbsp. lime juice
  12. Ground pepper to taste
  13. Optional 2 tbsp finely chopped cilantro for garnish
Instructions
  1. Heat ghee or coconut oil in a sauce pan and add mined lemon grass, ginger and chili flakes
  2. stir on medium heat for 1-2 minutes
  3. Pour in your chicken stock and stir in fish sauce and pepper to taste
  4. Simmer for 15 minutes.
  5. Stir in the coconut milk, and mushrooms and cook till mushrooms are soft (around 5 minutes)
  6. Stir in the lime juice, green onions and honey
  7. Garnish with cilantro or bean sprouts, parsley or you can add shredded chicken
